Can I move from Eventbrite without a monthly fee?

Yes. Ticketlab does not charge a monthly platform fee to create or list your event.

When do organisers get paid?

With Stripe Connect, payments from each ticket purchase arrive in your bank account about 7 days after each purchase, with daily deposits while your event is on sale. Prefer a bank transfer instead? Who pays the booking fee?

By default your guests pay the booking fee at checkout. You can absorb it in the ticket price where the product allows.
